Hidalgo La Gitana winery makes its manzanilla Pastrana only with Palomino grapes grown in Pagos Balbaína and Miraflores, two of the best areas in Jerez.

This is not your regular manzanilla. Manzanilla “pasada” means the wine has been maturing under flor for an exceptionally long period, which leads to the yeast layer decaying a bit, allowing for some oxidation and therefore a more complex wine.

Expect Marcona almonds, hazelnuts, a fresh salinity, and some hint of grapefruit and orange peel in the finish.
